Healthy Vegetarian Stuffed Peppers

In honor of Workout Wednesday, I’m sharing my favorite healthy vegetarian stuffed pepper recipe with you! I love making this meal when I have a busy week ahead and can cook up something to eat as leftovers. These peppers are packed with protein, fiber, and healthy grains that will keep you full and satisfied.



I love using red, orange, and yellow peppers because they are loaded with Vitamin C. There’s also something appealing about eating bright colored foods. I even chop the pepper tops into the stuffing to give it some crunch and added color!


You can easily give these peppers a vegan spin by omitting the feta cheese! You can also beef them up (literally) by substituting 1/2 of the quinoa with 1/2 a pound of ground turkey or ground beef. This recipe is one of my favorites because it’s so versatile and you can tweak it to your needs!

Vegetarian Stuffed Peppers

Servings 6 servings

Ingredients
  

  • 6 colored bell peppers
  • 3 cups cooked quinoa
  • 1 cup corn kernels
  • 1/2 can diced tomatoes
  • 1 15 oz can black beans
  • 1/4 cup diced parsley
  • 8 oz crumbled feta cheese OPTIONAL
  • 1 1/2 tsp garlic powder
  • 1 tbs cumin
  • 1/4 tsp cayenne
  • 1 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt (to taste)
  • 1/4 tsp ground black pepper (to taste)

Instructions
 

  • 1. Preheat oven to 400 degrees F. 
    2. Cut the top off of each bell pepper. Remove seeds from cavity. Place topless peppers in a 9×13 in baking dish. Remove stem and dice the stemless tops. 
    3.  Combine diced pepper tops, quinoa, corn, beans, tomatoes, parsley, and spices in a large bowl.
    4. Fill each bell pepper with stuffing mixture. Top with crumbled feta cheese (optional).
    5. Pour 1/2 c of water into bottom of baking dish to help steam the peppers. Cover with aluminum foil and bake for 30 min. Remove foil and cook for additional 10 or until peppers are tender and filling is heated through.
    6. Serve & enjoy!
    * Substitute 1.5 c of quinoa for 1/2 lb of ground beef for meat option*
