Vegetarian Stuffed Peppers

Servings 6 servings

Ingredients
  

  • 6 colored bell peppers
  • 3 cups cooked quinoa
  • 1 cup corn kernels
  • 1/2 can diced tomatoes
  • 1 15 oz can black beans
  • 1/4 cup diced parsley
  • 8 oz crumbled feta cheese OPTIONAL
  • 1 1/2 tsp garlic powder
  • 1 tbs cumin
  • 1/4 tsp cayenne
  • 1 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt (to taste)
  • 1/4 tsp ground black pepper (to taste)

Instructions
 

  • 1. Preheat oven to 400 degrees F. 
    2. Cut the top off of each bell pepper. Remove seeds from cavity. Place topless peppers in a 9x13 in baking dish. Remove stem and dice the stemless tops. 
    3.  Combine diced pepper tops, quinoa, corn, beans, tomatoes, parsley, and spices in a large bowl.
    4. Fill each bell pepper with stuffing mixture. Top with crumbled feta cheese (optional).
    5. Pour 1/2 c of water into bottom of baking dish to help steam the peppers. Cover with aluminum foil and bake for 30 min. Remove foil and cook for additional 10 or until peppers are tender and filling is heated through.
    6. Serve & enjoy!
    * Substitute 1.5 c of quinoa for 1/2 lb of ground beef for meat option*
